What is the benefit of using carbon steel over stainless steel in your opinion? Currently researching a new pan to buy and can't make my mind up! Thanks!

Hii!! Im so sorry it took me forever to reply to this. I find carbon steel a bit more forgiving. In my experience, its more non stick and also gives a better sear than stainless steel. In the end it's a lot about personal preference.
